Once we harvested our honey, we set out to make a complete meal using honey in all our menu items. From drink to dessert, we poured on the honey. The result was a healthy, delicious meal that was a much fun to make as it was good to eat. We made fresh lemonade, sweetened with honey. And we barbecued a pork tenderloin finished with a honey baste. Our salad included a honey vinaigrette, and our desert was an applesauce cake sweetened with honey. What a perfect way to enjoy our fresh honey!
We started out with a pitcher of homemade lemonade.
We added a sprig of rosemary to make it festive.
Next up was the main course, barbecued pork tenderloin. First we made a rub of:
- 3 tablespoons New Mexico Molido chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
We blended these ingredients, and reserved one tablespoon for later. Then we rolled the pork tenderloin in the rub until it was completely coated. Next we laid four sprigs of rosemary on top of the tenderloin and wrapped bacon strips around the tenderloin to hold the rosemary in. You have to appreciate the genius of “needing” bacon to hold the rosemary in place! You may need to use toothpicks to hold the bacon in place. This isn’t nearly so clever as using bacon to hold rosemary in place, but it gets the job done. Now the tenderloin is ready for the barbecue.
Next we put the tenderloin on low heat and turned it frequently for 30 minutes.
Orange/Beet Honey Salad
Next up is a salad to round things off. Our salad included oranges, golden and red beets, blue cheese crumbles, and dill. We drizzled the salad with a dressing made of red wine vinegar, olive oil, and honey to taste. We got the idea for this salad from one of our favorite honey cookbooks, The Fresh Honey Cookbook: 84 Recipes from a Beekeeper’s Kitchen.
Now our meal is ready to serve!
To round out our meal, we made a delicious applesauce cake using a cup of our freshly harvested honey and a cup of our very own unsweetened applesauce. We topped it off with homemade whipped cream. Yum, yum, yum! What a meal!
